Before opening Southern Caribbean Restaurant, Chef Thomas Hewitt's interest and passion for cooking started from a very young age, while growing up in Manchester Parish on the island of Jamaica. Inspired by his mother, who told him "With cooking, you must know what is good and what is bad. Learn that and you will know how to cook anything." Thomas sought a career in the culinary world. His training started at New Vision Children's Home in Christiana, Jamaica.
Thomas yearned to learn more. In July 2008, he left Jamaica and relocated to Birmingham, AL. In Birmingham, Thomas landed a job at the Renaissance Birmingham Ross Bridge Golf Resort & Spa. It was here, where he tirelessly enhanced his skills and learned about different cuisines and cultures. He was soon promoted as Head Chef and Kitchen Supervisor.
As Thomas excelled in his position at Ross Bridge, his passion for cooking Jamaican style Caribbean food never left him. So in March 2012, Thomas and his wife, Lillian, opened their Jamaican food restaurant in Fairfield/ Birmingham...Southern Caribbean Restaurant! Here they bring a wealth of expertise combined with a love for good quality, traditional Caribbean food.
